Our favourite brownies! These are soooo gooey and delicious and packed with good stuff too. A treat for the gut as well as your sleep-deprived soul!

  • 5 prunes or dates
  • 100 g dark chocolatefor melting; use dairy-free dark chocolate for the dairy-free version
  • 70 g coconut oilUse an extra 20g in place of the butter for the dairy-free version.
  • 20 g butterOmit for the dairy-free version and replace with 20g extra coconut oil.
  • ¼ cup brown sugar or maple syrup
  • 2 eggs
  • 1 can black beansdrained and rinsed
  • ¼ cup cocoa
  • ½ tsp baking powder
  • 2 tbsp chia seeds
  • 50 g dark chocolatechopped into chunks; use dairy-free dark chocolate for the dairy-free version

Method

  1. Preheat the oven to 160°C.
  2. Cover your prunes or dates with boiling water and set aside.
  3. Melt the 100g dark chocolate with the coconut oil and butter until smooth.
  4. Drain the prunes or dates well. Add them, the melted chocolate mixture and all remaining ingredients except the 50g chopped dark chocolate to a food processor, then blend until completely smooth.
  5. Fold through the 50g dark chocolate, chopped into chunks.
  6. Transfer the mixture to your lined brownie tin and smooth out.
  7. Bake at 160°C for 12–15 minutes. You still want the brownie to be a little soft in the middle, but not runny. Gently tap your finger into the middle of the brownie to test.
